Fun appetizers and finger food to keep your guest moving and shaking

How much to serve at your event? Here are some helpful hints for ordering your appetizers:

* For a social or cocktail hour before dinner, plan to serve 3 or 4 different appetizers and allow 3 to 4 bites per person

* For an open house affair, plan to serve 4 to 5 different appetizers and allow 4 to 6 bites per person per hour of serving.

* For an appetizer buffet that is served in place of a meal, plan to serve 6 to 8 different appetizers and allow 6 to 9 bites per person per hour of serving. 

* When figuring the amount of meat to serve a good plan is 1/4 of a pound to a 1/3 of a pound per person when serving side items.

Chicken Spedini on a stick – in a sweet pineapple sauce or plain with Ranch dressing or BBQ sauce on the side

Rumake – Water chestnuts wrapped in bacon and a sweet sauce to accent the flavor

Pineapple Salsa - This salsa is great for any event, but especially for that Hawaiian or Caribbean party

Southern Fruit Caviar - you will find it hard to stop eating this fruity salsa with cinnamon chips

Meatballs - Sweet n Sour or BBQ style or Cranberry, maybe Swedish style or in a rich Brown Gravy

Sausage Cheese Bites - delicious bite that can be prepared mild or spicy

    Fruit Tray Display ~ (Seasonal Items) ~ Generous watermelon basket beautifully carved and displayed on a large tray, overflowing with cantaloupe, watermelon, grapes, pineapple and strawberries. The tray is garnished with pineapple tops and cantaloupe crowns.  Cost $155.00 for 75 - 100 guest   $125.00 for 75 - 50 guest   $100.00 for less than 50 guest.

    Watermelon Basket ~ (Seasonal Items) ~ Beautifully carved watermelon basket with watermelon, cantaloupe, grapes, pineapple and strawberries in bite size pieces. Cost $75.00

    Watermelon Carvings ~ (Seasonal Items) ~ Watermelon carvings: Baby Carriage, Pelican, Boat, Graduation Theme, Retirement Theme, Luau Theme, etc (see photo gallery for ideas plus we have many more) Starting cost $85.00 (based on complexity of carving request)

    Vegetable Tray ~ Fresh, crisp vegetable trays with dip; baby carrots, celery sticks, broccoli and cauliflower florets, cucumber slices, peppers, cherry tomatoes or mushrooms.     Delicious Eye-Appealing Meat and Cheese tray ~ Roast Beef, Roasted Turkey, Smoked Ham, American and Swiss Cheese with assorted rolls and condiments to accomplain the tray. Cost $35.00 (figure 2 sandwiches per person with your side items) serves 6 - 8 people; $55.00 serves 10 - 15 people; $75.00 serves 15 - 20 people; $85.00 serves 20 - 25 people

    Peel n Eat Shrimp Platter ~ Shrimp (26 - 30 ct. per pound extra large; 40 - 60 ct. per pound medium) served with cocktail sauce on a greenery bed.             Cost: 2#/$35.00; 3#/$45.00; 4#/$55.00 on extra large.                     Cost: 2#/$35.00 on medium.

    Our Famous Top Round Roast Beef ~ Sliced to your specification serving as an entree, or thin slice or shaved. Au jus served on the side. $5.99/# under 10 pounds per order minimum 5 pounds; $5.50/# minimum 10 pounds per order. When figuring the amount to order 1/3# - 1/4# per person based on other items being served. (Much more reasonable in price and taste as compared to your local deli which does not supply the au jus.)

    Pull Pork in BBQ sauce ~ Served in a container with your choice of rolls or sliced bread - $20.00/doz or $4.75/#

    Roast Beef in BBQ sauce ~ Served in a container with your choice of rolls or sliced bread - $25.00/doz or $5.50/#

    "Drink Tips" for that special event

    Before you stock your bar, you need to know how much alcohol and mixers to purchase. This guidelines below are helpful for any bar setup, but if you are having a full bar, consult the chart farther below to make sure you have sufficient amounts of the various liquors and mixers. Of course, it is always good to throw in some extras in case the party lasts longer than you planned, there are additional unexpected guests, or one drink is more popular than others are.

    • Each guest will drink an average of two drinks the first hour and one drink each hour thereafter.

    • A one-liter bottle of alcohol yields approximately 22 mixed drinks, so if you know how many guests are attending and what kind of bar you are going to have, you can easily figure out how much alcohol to purchase.

    • To accommodate any non-cocktail drinkers, estimate one bottle of wine per eight guests, remembering that white wine tends to be more popular than red.

    • One 750-ml bottle of Champagne fills six regular Champagne glasses. The amounts listed in the chart below account for how much Champagne guests will drink from the bar. If you plan to have a Champagne toast, you will need to purchase additional bottles—you only need to pour about a third of a glass for a toast, so plan on one bottle of bubbly for every ten guests.

    • Garnishes are relatively cheap, so it is always smart to buy extras. Plan on a 1/2 lemon and 1/2 lime and two each of olives, cherries, and onions per guest. This means that if you have 24 guests, you will need at least 12 lemons and 12 limes plus 48 each of olives, cherries, and onions.

    • Plan on one pound of ice per person. This will provide enough ice for drinks as well as any ice baths for wine or beer.
